Everyone will be excited, don't build up the surprise and reaction in your mind - you never know how a child will react in the moment. Depending on their age they could be totally confused and not even know what in the heck Walt Disney World is, or they could scream for joy and jump up and down. It is important for the adults in the room to be, ahem, adults about it and help them understand if it is needed. The worst thing you can do is give a piece of paper to a child who can't read! Set the scene for your trip reveal with some Mickey Mouse party supplies; Mickey tablecloth, plates, cups and napkins and make Mickey waffles, they sell them frozen at the grocery store or if you're fancy you can purchase a Mickey waffle maker. Even simpler you can make standard pancakes and use a Mickey shaped cookie cutter to make a Mickey head pancake.
You can surprise your kids before you eat or while you're at the table. When I did this for my kids I set up our living room with some red, yellow, and black balloons and I wrapped a Walt Disney World themed gift for them. They couldn't read at the time so I wanted lots of visual clues. They knew Mickey was involved but I had to help them by shouting "We're going to Disney World!!".
