One of my favorite days of the year is almost here! March 2nd, aka Dr. Seuss Day! I am a huge fan of all things Seuss and I love celebrating him each year. When I worked at a daycare I made sure my class got to enjoy "green eggs and ham" and we made Seuss themed crafts. Now as a mom I make sure we attend as many Seuss-themed events in the area as we can! This post is dedicated to food, Seuss food, that is. I've rounded up 13 Seuss inspired foods to help you celebrate Dr. Seuss Day (Read Across America Day)
To start, I'm going to share my personal favorite Seuss-snack. "Green eggs and ham". This is super simple all it takes is a 'Nilla Wafer cookie, vanilla pudding and a few drops of green food coloring. For a healthier version you can easily substitute the pudding for yogurt.
